AMITY Hospitality was founded in late 2017 to provide a new approach in managing hotels with specialist skills in Management, Development and Consultancy.


The Amity Hospitality Ltd founders, Mike Sheffield and Chris Charalambous who are both seasoned hoteliers, have a vast amount of experience and expertise in hotel Management, Development and Consultancy. All 3 services can be tailored to meet the business demands of the owners, institutions and investors.

Chris Charalambous


Chris has worked in the hotel industry for over 30 years, operating and managing hotels across the UK. He also acquired a number of years’ experience as a senior executive – and later as the Chief Executive – of St Johnstone Football Club before joining Focus Hotels Management Ltd.

Mike has worked in the hospitality industry for over 30 years, starting at an early age during schooling, having then been bitten by the bug, spent 2 years at college gaining qualifications in this field, and then went out into the industry to gain practical experience.

Nick Kourie

Operations Director

Nick is an exceptional leader with a track record of leading large teams of people in 4/5 star environment to exceed guest expectations and enhance the customer journey within the hospitality, travel, golf and tourism sector. Experienced in delivering change, cultivating company cultures, he is the driving force behind navigating large teams of people towards achieving a shared collaborative vision. Skilled in driving direct sales, people management, compliance and property management and ensuring sustainability for our portfolio of properties.

Calum Brown

Finance Manager

Calum has worked in the accountancy industry for just under 10 years, employed by small to mid-tire accountancy firms across central Scotland. Calum acquired several years’ experience as an Accounts Senior before moving onto AMITY Hospitality Limited as Finance Manager.

Gillian Birrell

Finance Manager

Gillian joined AMITY Hospitality Limited in February 2019 bringing with her over 20 years experience in the hotel industry. Gillian started her career as an office junior working at a local hotel based in Kinross. Gillian progressed through her career working directly for the hotel that she held her junior position. Gillian specialism was always in finance, which led her to joining AMITY as a valued member of the finance team.

Dean Charalambous

Procurement & IT

Dean has been around the Hospitality industry since he was born, with his first job being a glass collector at 12 years old! Since then, he has spent a number of years in sales/management roles, quickly developing a skill set that let to successfully delivering in every role. Dean has been a colleague in the Amity team from inception and has been passionate about delivering every aspects of the Amity Mission Statement. Seeing the team grow and striving to be better every day is a huge motivation as well as knowing customers are always having an enjoyable visit to any Amity site.

Katerina Charalambous

Social Marketing Manager

Katerina has grown up around hotels and worked in Hospitality since the age of 14. She has experience in almost every role in a hotel – From reception, to the kitchen, to housekeeping, to the restaurant, and more! Her vast knowledge of the industry is a great asset when it comes to running the social media pages for Amity Hospitality’s clients and creating things such as leaflets, posters and menus. It also means that she isn’t afraid to jump in to help out in any areas where she notices assistance is required!

Bettina Charalambous


Bettina has spent most of her career in the finance sector, acquiring a wealth of experience in both the Private and Public sectors. Her early career involved working for Midland Bank (now HSBC) and Norwich Union (now Aviva) and more recently she worked for the Medical Research Council (MRC) and UK Research & Innovation (UKRI). She has worked in various positions over the years including managerial, projects and change management. In 2018 she ran Deversorio Management Ltd, a Cyprus based company managing the upkeep of communal areas in apartment complexes on behalf of the owners. Bettina joined Amity Hospitality Ltd on a full-time basis just before the arrival of Covid-19 and she works with both Chris and Mike in all aspects of the running of the business.

Julie Sheffield


Julie has worked in the hospitality industry for over 30 years. I wanted to travel and found that I could combine a career in hospitality with my love for travel. Working in the UK and overseas, hospitality was the perfect platform to gain knowledge and experience in the hotel industry.

Nathan Ross

Support Chef

Nathan has worked in the hospitality sector for 8 years. Starting off in a small hotel as a kitchen porter, before finding a passion for food and wanting to pursue a career in hospitality. Whilst working he decided to gain some qualifications in the industry before changing workplace to the Green Hotel to help broaden his knowledge of food. Gaining the knowledge he required to keep progressing his career. He joined Amity Hospitality as a support Chef and he has worked at the Gables Hotel, Fairways Restaurant and Golf Centre, Garth Hotel, Green Hotel, Kinross Beer Garden and supported our operation, both in the kitchen and most recently front of house where he is receiving some training on the overall running of hotels.

Sean Gadsby

Operations Manager

Sean has worked in the hospitality industry for over 10 years. Finding joy in providing a good service and bringing smiles to customers’ faces. Using the hospitality industry to travel he experienced many different styles of service and has incorporated all he learned, into his style of management and training. Having worked in almost every department of hospitality has a real understanding of how to bring teams together to provide more complete customer service. Organising a smooth bar operation, creating menus and running restaurants has always been his main focus. When Sean isn’t at work, he can be found at the golf course or attempting to play squash.


Amity Hospitality shapes its management, development and consultancy agreements to suit the owners and their objectives. We are on hand to take full responsibility for overseeing development projects for either branded or unbranded hotels, to manage the hotel on behalf of the owner or, in some cases, offer our consultancy services which can be designed to grow the business or challenge a particular area of concern on behalf of the owner(s) / stakeholder(s).

The fundamental philosophy is to develop the profitability of the business and add value to our clients’ assets by providing strong strategic management. We achieve good results by implementing robust policies within the Sales, Service, Property and Finance areas.

Our clients will be provided with detailed management information to keep the owners and/or investors fully informed of the business’ performance.

Amity Hospitality currently has a number properties under its management, a number of consultancy agreements and some ongoing development for both branded and unbranded hotels totalling over 300 bedrooms. All developments are currently at the planning stage seeking planning approval.

Previously home to what had recently been described as one of the “Magnificent Seven” courses in Carnoustie Country, unfortunately was closed back in 2019 – this due to high support costs to the local council. However, plans have been submitted to re-develop the course with the re-instatement of 9 of the 18 holes to make a Par 36 3275-yard testing golf challenge. In addition, other parts of the course will feature an 18-hole putting green, alongside a new state of the art Driving Range featuring the latest ball tracking technology. The development is due to start in Summer 2021 with planning already much further on. Opening anticipated in Spring 2022.
